Method
Preparing Sticky Rice
- 1
Soak the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in enough water to cover it for at least 4 hours or overnight for best results.
- 2
Cook the Rice
Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice over boiling water for about 30-40 minutes, or until it's tender and sticky.
- 3
Prepare the Coconut Sauce
In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium-low heat, stirring until the sugar dissolves. Do not bring it to a boil.
- 4
Mix Rice with Coconut Sauce
Once the rice is cooked, transfer it to a bowl and pour about 3/4 of the coconut sauce over it. Stir well to combine and let it sit for about 15 minutes to absorb the flavors.
Preparing Mango Topping
- 5
Prepare the Mango
Peel the ripe mangoes and slice them into thin strips or cubes.
- 6
Toast Sesame Seeds
In a small pan over medium heat, toast the sesame seeds until golden brown, stirring frequently to avoid burning.
Assembling the Dish
- 7
Plate the Sticky Rice
Scoop a generous amount of the sticky rice onto a serving plate.
- 8
Add Mango and Drizzle Coconut Milk
Arrange the sliced mango on top of the sticky rice, then drizzle with the remaining coconut milk. Sprinkle the toasted sesame seeds over the top.
- 9
Serve
Serve warm or at room temperature, and enjoy your delicious Mango Sticky Rice!
