Preparing the Beef

    Marinate the Beef

    Thinly slice the beef sirloin against the grain. In a bowl, combine the sliced beef, minced lemongrass, minced garlic, fish sauce, sugar, and black pepper. Mix well to coat the beef evenly. Cover and let marinate for at least 30 minutes, or refrigerate for up to 2 hours for more flavor.

    Cook the Beef

    Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated beef in a single layer. Cook for about 3-4 minutes on each side or until the beef is cooked through and has a nice char. Remove from heat and let it rest for a few minutes before slicing into strips.

Preparing the Vegetables

    Pickle the Carrots and Daikon

    Julienne the carrots and daikon radish. In a bowl, combine 1 cup of water, 1 cup of vinegar, and 1 tablespoon of sugar. Stir until sugar dissolves. Add the julienned carrots and daikon to the liquid and let them sit for at least 15 minutes to pickle.

    Prepare the Cucumber and Jalapenos

    Slice the cucumber into thin strips and slice the jalapenos into rings. Set aside.

Assembling the Sandwich

    Prepare the Bread

    Slice the Vietnamese baguettes lengthwise without cutting all the way through, creating a pocket for the filling.

    Build the Sandwich

    Spread 1 tablespoon of pâté inside each baguette. Layer the cooked beef, pickled carrots, daikon, cucumber strips, jalapenos, and fresh cilantro. Close the baguette and press down gently.
