Method
Marinating the Pork

Prepare the Marinade
In a mixing bowl, combine ground pork, minced garlic, minced shallots, fish sauce, sugar, black pepper, and finely chopped lemongrass. Mix well until all ingredients are well combined.

Marinate the Pork
Cover the bowl with plastic wrap and let the pork marinate in the refrigerator for at least 30 minutes, or up to 2 hours for better flavor.

Prepare the Vermicelli Noodles
Bring a pot of water to a boil. Add the vermicelli noodles and cook according to package instructions, usually about 3-4 minutes until tender. Drain and rinse under cold water to stop the cooking process.
Making the Dipping Sauce

Combine Ingredients
In a small bowl, whisk together fish sauce, water, sugar, lime juice, minced garlic, and finely chopped chili until the sugar is dissolved and the sauce is well-mixed.
Serving

Assemble the Dish
Serve the grilled pork over a bed of vermicelli noodles. Garnish with fresh herbs, sliced cucumber, and bean sprouts. Serve with the dipping sauce on the side.
