Beef Stew Preparation

Sear the Beef
In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Season the beef shank with salt and black pepper. Sear the beef on all sides until browned, about 8-10 minutes.

Simmer the Stew
Return the seared beef shank to the pot. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 2-3 hours, or until the beef is tender and falls apart easily.

Season to Taste
Once the beef is tender, taste the stew and season with additional salt and black pepper as needed. Remove the bay leaves before serving.

Boil the Water
In a separate pot, bring 4 cups of water to a boil. Add salt to taste.

Cook the Noodles
Add the egg noodles to the boiling water and cook according to package instructions, typically about 6-8 minutes, until al dente.

Drain and Serve
Once cooked, drain the noodles and serve them in bowls topped with the beef stew.
