Method

Beef Stew Preparation

  1. 1

    Sear the Beef

In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Season the beef shank with salt and black pepper. Sear the beef on all sides until browned, about 8-10 minutes.

  2. 2

    Add Aromatics

Remove the beef from the pot and set aside. Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onion is translucent.

  3. 3

    Add Vegetables and Broth

Add the chopped carrots, beef broth, tomato paste, bay leaves, and thyme to the pot. Stir to combine.

  4. 4

    Simmer the Stew

Return the seared beef shank to the pot. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 2-3 hours, or until the beef is tender and falls apart easily.

  5. 5

    Season to Taste

Once the beef is tender, taste the stew and season with additional salt and black pepper as needed. Remove the bay leaves before serving.

Noodle Preparation

  1. 6

    Boil the Water

In a separate pot, bring 4 cups of water to a boil. Add salt to taste.

  2. 7

    Cook the Noodles

Add the egg noodles to the boiling water and cook according to package instructions, typically about 6-8 minutes, until al dente.

  3. 8

    Drain and Serve

Once cooked, drain the noodles and serve them in bowls topped with the beef stew.
