Method

Marinating the Pork

    Prepare the Marinade

    In a large bowl, combine the soy sauce, honey, minced garlic, grated ginger, five-spice powder, and black pepper. Mix well.

    Marinate the Pork

    Add the pork shoulder to the marinade, ensuring it is fully coated. Cover the bowl and refrigerate for at least 4 hours, or overnight for best results.

Pickling the Vegetables

    Prepare the Pickling Liquid

    In a medium saucepan, combine water, rice vinegar, sugar, and salt. Bring the mixture to a gentle boil over medium heat, stirring until the sugar dissolves.

    Pickle the Vegetables

    Place the julienned carrots and daikon radish in a clean jar. Pour the hot pickling liquid over the vegetables, ensuring they are fully submerged. Let cool, then refrigerate for at least 1 hour before serving.

Cooking the Pork

    Cook the Pork

    Preheat your grill or oven to 375°F (190°C). Remove the pork from the marinade and place it on the grill or in a roasting pan. Cook for approximately 30-40 minutes, or until the internal temperature reaches 145°F (63°C). Allow the pork to rest for 10 minutes before slicing.

Assembling the Sandwich

    Prepare the Bread

    Slice the Vietnamese-French bread lengthwise, making sure not to cut all the way through.

    Add Pâté

    Spread 1 tablespoon of pâté on the inside of each piece of bread.

    Layer the Ingredients

    Add sliced cucumbers, jalapenos, and a few sprigs of fresh cilantro inside the bread. Top with sliced pork.

    Close the sandwich and serve immediately, or wrap in parchment paper for later.
