Prepare the Pig
Clean and prepare the whole pig, ensuring all innards are removed. Season the pig inside and out with salt, black pepper, cumin, paprika, garlic powder, and lime juice. Let it marinate for at least 4 hours or overnight in the refrigerator.

Roast the Pig
Preheat your oven or outdoor roasting pit to 250°F (120°C). Place the pig on a roasting rack and roast for about 8-12 hours, until the internal temperature reaches 190°F (88°C). Baste occasionally with leftover marinade.

Make the Tortillas
In a mixing bowl, combine corn masa flour and water. Knead until a smooth dough forms. Divide into small balls and flatten into discs. Cook on a hot griddle for 30-60 seconds on each side until slightly charred.

Prepare the Toppings
While the pig is roasting, prepare pico de gallo, guacamole, and the salsas. Chop tomatoes, onions, and cilantro for pico de gallo. Mash avocados and mix with lime juice and salt for guacamole. Prepare salsa verde and salsa roja according to your favorite recipes.

Assemble Tacos
Once the pig is fully cooked, shred the meat. Serve on warm tortillas with toppings of your choice: cilantro, red onion, cotija cheese, guacamole, salsa verde, salsa roja, and pico de gallo.
