    In a large bowl, combine the mixed olives. If using brined olives, drain and rinse them under cold water to reduce saltiness.

    In a small saucepan, heat the olive oil over medium heat. Add the lemon rind, fresh thyme, bay leaves, smashed garlic cloves, red pepper flakes, and black peppercorns. Stir gently to combine.

    Allow the oil mixture to warm for about 5-7 minutes, stirring occasionally. Do not let it boil; you want to infuse the flavors gently.

    Once the oil is warm and fragrant, remove it from heat and pour it over the olives. Stir well to ensure the olives are fully coated with the marinade.

    Cover the bowl and let the olives marinate at room temperature for at least 30 minutes. For best results, let them sit for a few hours or overnight in the refrigerator.
