Burger Patties

Prepare the patties
Divide the wagyu beef into two equal portions, about 8 ounces each, and shape them loosely into balls.

Season the patties
Sprinkle salt and black pepper evenly over both sides of the patties.
Cooking the Burgers

Smash the patties
Place the beef balls on the skillet, and using a spatula, smash each ball down firmly to create a thin patty. Cook for 2-3 minutes without moving them.

Add cheese
Flip the patties and immediately place two slices of American cheese on each patty. Cook for an additional 1-2 minutes until the cheese is melted.

Prepare the buns
Toast the seeded burger buns on the skillet for about 1 minute until golden brown.

Assemble the burger
On the bottom half of each bun, layer the shaved lettuce, sweet onions (sliced thin), and B&B pickles. Place two cheese-topped patties on top, and drizzle with Kewpie sauce. Top with the other half of the bun.
Cooking the Fries

Prepare the oil
In a large pot, heat vegetable oil to 350°F (175°C).

Fry the fries
Carefully add the frozen French fries to the hot oil in batches. Fry until golden and crispy, about 3-4 minutes.

Season the fries
Remove the fries from the oil and drain on paper towels. Sprinkle with salt immediately while still hot.
