Preparation of Ingredients

  1. 1

    Prepare the Jammy Eggs

Bring a small pot of water to a boil. Gently add the eggs and boil for 6-7 minutes. Transfer eggs to an ice bath for at least 5 minutes to stop cooking. Peel and set aside.

  2. 2

    Cook the Soba Noodles

In a large pot, bring water to a boil and add the soba noodles. Cook for 4-5 minutes or until just tender. Drain and rinse under cold water to stop cooking. Set aside.

  3. 3

    Roast the Mushrooms

Preheat the oven to 200°C (400°F). Toss the mixed mushrooms in a bowl with tamari sauce, sesame oil, salt, and black pepper. Spread them on a baking sheet and roast for 15-20 minutes until golden and tender.

  4. 4

    Prepare Root Vegetables

While the mushrooms are roasting, use a mandoline or sharp knife to shave the carrot and daikon radish into thin strips. Set aside.

  5. 5

    Prepare the Edamame

If using frozen edamame, cook according to package instructions. Drain and set aside.

Assembly

  1. 6

    Assemble the Bowl

In a large bowl, add a serving of soba noodles at the bottom. Top with roasted mushrooms, shaved root vegetables, and edamame. Drizzle with ponzu sauce and garnish with wasabi peas.
