Cook the Soba Noodles
In a large pot, bring water to a boil and add the soba noodles. Cook for 4-5 minutes or until just tender. Drain and rinse under cold water to stop cooking. Set aside.

Roast the Mushrooms
Preheat the oven to 200°C (400°F). Toss the mixed mushrooms in a bowl with tamari sauce, sesame oil, salt, and black pepper. Spread them on a baking sheet and roast for 15-20 minutes until golden and tender.

Prepare the Edamame
If using frozen edamame, cook according to package instructions. Drain and set aside.
Assembly

Assemble the Bowl
In a large bowl, add a serving of soba noodles at the bottom. Top with roasted mushrooms, shaved root vegetables, and edamame. Drizzle with ponzu sauce and garnish with wasabi peas.

Add the Jammy Egg
Cut the jammy eggs in half and place them on top of the bowl. Optionally, sprinkle with further black pepper or sesame seeds as desired.
