    Pickle the Shallots

    If the pickled shallots are not already prepared, slice the shallots thinly and soak them in equal parts vinegar and water for at least 30 minutes. Add a pinch of salt and sugar to enhance the flavor.

    Prepare the Avocado

    Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until you achieve the desired level of creaminess. Add a pinch of salt and mix well.

    Chop the Toppings

    Finely chop the Fresno chili (remove seeds for less heat if preferred) and cilantro. Set aside for assembly.

    Toast the Bread

    Toast the sourdough bread slices until golden brown and crispy.

    Once toasted, spread a generous layer of the mashed avocado over each slice of sourdough bread.

    Distribute the pickled shallots evenly over the avocado. Sprinkle the chopped Fresno chili and cilantro on top. Finally, add the mixed seeds as a crunchy topping.
