    Marinate the Chicken

    In a large bowl, combine harissa paste, olive oil, lemon juice, minced garlic, cumin powder, and paprika. Whisk until well combined. Rub this marinade all over the chicken, including under the skin. Season the chicken with salt and black pepper. Cover and refrigerate for at least 2 hours or overnight for best flavor.

    Prepare the Vegetables

    If using, prepare the vegetables by cutting carrots into sticks, quartering the red onion, and cutting potatoes into wedges. Set aside.

Cooking

    Preheat and Roast

    Preheat your oven to 300°F (150°C). Place the marinated chicken in a roasting pan. If using, arrange the prepared vegetables around the chicken.

    Roast the chicken in the preheated oven for about 2.5 to 3 hours, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Baste the chicken with its own juices every 30 minutes.

    Once cooked, remove the chicken from the oven and let it rest for 15-20 minutes before carving. Garnish with chopped cilantro before serving.
