Piri Piri Chicken

    Marinate the Chicken

    In a bowl, combine the piri piri sauce, olive oil, minced garlic, lemon juice, salt, and black pepper. Mix well.

    Prepare the Chicken

    Place the whole chicken in a large resealable bag or dish and pour the marinade over it, ensuring it is well coated. Seal and refrigerate for at least 2 hours, or overnight for best results.

    Roast the Chicken

    Preheat the oven to 375°F (190°C). Remove the chicken from the marinade and place it in a roasting pan. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste occasionally with the pan juices.

Corn Mustard Sauce

    Combine Ingredients

    In a small saucepan, combine the sweet corn, yellow mustard, honey, apple cider vinegar, salt, and black pepper.

    Cook the Sauce

    Heat over medium heat until warmed through, about 5-7 minutes, stirring occasionally. Remove from heat and set aside.

Grain Salad

    Cook the Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.

    Prepare Salad Ingredients

    In a large bowl, combine the cooled quinoa, cherry tomatoes, diced cucumber, chopped red onion, and parsley.

    Dress the Salad

    Drizzle with olive oil and lemon juice, then season with salt and black pepper. Toss gently to combine.
