Lemony English Peas

    Prepare the Peas

    In a medium saucepan, combine the shelled English peas, lemon juice, olive oil, salt, and black pepper. Cook over medium heat for about 5 minutes until the peas are tender but still bright green. Remove from heat and set aside.

Pickled Zucchini

    Pickle the Zucchini

    In a small saucepan, combine white vinegar, water, sugar, salt, smashed garlic, and black peppercorns. Bring to a boil, then remove from heat and let it cool slightly. Place the zucchini slices in a jar and pour the pickling liquid over them. Let sit for at least 30 minutes before using.

Pea Fritters

    Make the Fritter Batter

    In a mixing bowl, combine the pureed peas, all-purpose flour, egg, baking powder, and salt. Mix until well combined.

    Fry the Fritters

    In a large skillet, heat olive oil over medium heat. Scoop spoonfuls of the batter into the hot oil and fry until golden brown on each side, about 3-4 minutes per side. Remove from skillet and drain on paper towels.

Assembly

    On a serving platter, place the burrata cheese in the center. Surround with the lemony English peas, pickled zucchini, and pea fritters. Sprinkle with za'atar spice mix and garnish with fresh mint leaves. Serve immediately.
