Cooking the Pasta

    Boil Water

    In a large pot, bring 4 cups of water to a rolling boil over high heat. Add 1 teaspoon of salt to the water.

    Cook Cavatelli

    Once the water is boiling, add 2 cups of cavatelli pasta to the pot. Stir gently to prevent sticking and cook according to the package instructions, usually about 7-9 minutes, until al dente.

    Drain Pasta

    Once cooked, drain the pasta in a colander, reserving a small amount of pasta water (about 1/4 cup) in case you need it later.

Preparing the Sauce

    Melt Butter

    In the same pot over medium heat, add 2 tablespoons of butter. Allow it to melt completely without browning.

    Add Ricotta

    Once the butter is melted, add 1 cup of ricotta cheese to the pot. Stir well to combine with the melted butter.

    Mix in Pasta

    Add the drained cavatelli to the ricotta mixture. Stir gently to combine, ensuring all pasta is coated with the sauce. If the mixture seems dry, add a little reserved pasta water, one tablespoon at a time, until desired consistency is reached.

    Finish with Parmesan

    Sprinkle in 1 cup of grated Parmesan cheese and 1 teaspoon of black pepper. Stir until the cheese is melted and everything is well combined. If using, add 1 tablespoon of chopped fresh basil for garnish.
