Method

Pancake Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, salt, and Supplant™ sugar substitute until well combined.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; it’s okay if there are a few lumps.

  4. 4

    Preheat the Pan

Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a little butter.

  5. 5

    Cook the Pancakes

Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.

  6. 6

    Repeat

Repeat the process with the remaining batter, greasing the skillet as necessary.

Topping Assembly

  1. 7

    Prepare the Berries

Wash and slice the seasonal berries if necessary. Set aside.

  2. 8

    Assemble the Pancake Stack

Stack the two pancakes on a plate, top with the seasonal berries, and drizzle with maple syrup.

  3. 9

    Serve

Serve warm and enjoy your delicious kids' pancake stack!
