    Prepare the Vegetables

    Dice the onion and slice the mushrooms. Set aside.

    Cook the Impossible Meat

    In a large skillet over medium heat, add olive oil. Once hot, add the Impossible meat and cook for about 5 minutes, breaking it apart with a spatula.

    Add the diced onion and sliced mushrooms to the skillet with the Impossible meat. Stir well to combine.

    Sprinkle garlic powder, salt, and black pepper over the mixture. Continue to cook for an additional 5-7 minutes until the vegetables are tender and the meat is heated through.

    Reduce heat to low. Lay the slices of white American cheese over the meat and vegetable mixture. Cover the skillet with a lid and let the cheese melt, about 2-3 minutes.

    While the cheese is melting, slice the hoagie rolls open lengthwise without cutting all the way through.
