Prepare the Fritter Mixture
In a large bowl, combine the corn kernels, chopped jalapeño, all-purpose flour, baking powder, salt, and black pepper. Mix until all dry ingredients are evenly distributed.

Add Wet Ingredients
Add the beaten eggs and chopped green onions to the dry mixture. Stir gently until just combined, being careful not to over-mix.

Heat Oil
In a large skillet, heat the vegetable oil over medium heat until shimmering.

Fry the Fritters
Using a tablespoon, scoop the fritter mixture and carefully drop it into the hot oil. Fry each side for about 3-4 minutes, or until golden brown and crispy. Remove from the oil and drain on paper towels.

Prepare the Salsa
In a medium bowl, combine the diced avocados, chopped tomatillos, chopped cilantro, lime juice, minced garlic, and salt. Gently mix until well combined, being careful not to mash the avocados too much.

Make Coriander Salt
In a small skillet over medium heat, toast the coriander seeds until fragrant, about 2-3 minutes. Remove from heat and let cool slightly. Once cooled, grind the seeds with sea salt in a mortar and pestle or spice grinder until fine.
