Pavlova Base

    Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.

    In a clean and dry mixing bowl, beat the egg whites on medium speed until soft peaks form.

    Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff peaks form and the mixture is glossy.

    Incorporate Other Ingredients

    Gently fold in the cornstarch, vinegar, and vanilla extract until just combined.

    Shape the Pavlova

    Spoon the meringue mixture onto the prepared baking sheet, shaping it into a circle with a slight indentation in the center.

    Bake for 1 hour, then turn off the oven and leave the pavlova inside to cool completely.

Coconut Gel

    In a small bowl, combine the gelatin powder and water. Let it sit for about 5 minutes to bloom.

    In a saucepan, heat the coconut milk and sugar over medium heat until the sugar dissolves.

Key Lime Curd
