Method
Pavlova Base
- 1
Preheat the Oven
Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
- 2
Whip Egg Whites
In a clean and dry mixing bowl, beat the egg whites on medium speed until soft peaks form.
- 3
Add Sugar
Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat until stiff peaks form and the mixture is glossy.
- 4
Incorporate Other Ingredients
Gently fold in the cornstarch, vinegar, and vanilla extract until just combined.
- 5
Shape the Pavlova
Spoon the meringue mixture onto the prepared baking sheet, shaping it into a circle with a slight indentation in the center.
- 6
Bake
Bake for 1 hour, then turn off the oven and leave the pavlova inside to cool completely.
Coconut Gel
- 7
Prepare Gelatin
In a small bowl, combine the gelatin powder and water. Let it sit for about 5 minutes to bloom.
- 8
Heat Coconut Milk
In a saucepan, heat the coconut milk and sugar over medium heat until the sugar dissolves.
- 9
Combine Gelatin with Coconut Milk
Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.
- 10
Chill the Gel
Pour the mixture into a shallow dish and refrigerate until set, about 2-3 hours.
Key Lime Curd
- 11
Combine Ingredients
In a saucepan, whisk together the key lime juice, egg yolks, and granulated sugar.
- 12
Cook the Mixture
Cook the mixture over medium-low heat, stirring constantly until it thickens (about 10 minutes).
- 13
Add Butter
Remove from heat and stir in the butter until melted and fully incorporated.
- 14
Cool the Curd
Transfer the curd to a bowl and cover with plastic wrap directly on the surface to prevent a skin from forming. Let it cool.
Whipped Cream
- 15
Whip the Cream
In a mixing bowl, beat the heavy whipping cream on medium speed until soft peaks form.
- 16
Add Sugar and Vanilla
Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
Assembly
- 17
Assemble the Pavlova
Once the pavlova has cooled, spread the whipped cream over the top, followed by the key lime curd and finally the coconut gel.
- 18
Serve
Slice and serve immediately for the best texture.
