Focaccia Preparation

Prepare the Dough
In a large bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5 minutes until frothy.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.

Shape and Second Rise
After the first rise, punch down the dough and shape it into a rectangle to fit a greased baking pan.

Preheat the oven to 400°F (200°C).
Assembling the Muffuletta

Cook the Eggs
In a non-stick skillet, cook the eggs sunny-side up over medium heat until the whites are set and yolks are still runny.

Prepare Kewpie Sauce
In a small bowl, mix Kewpie mayonnaise with lemon juice until well combined.

Slice the focaccia horizontally and spread the kewpie sauce on both sides.
