Method

Preparing the Tomatillo Sauce

    Blend the Sauce

    In a blender, combine the chopped tomatillos, cilantro, lime juice, minced garlic, and salt. Blend until smooth. Adjust seasoning to taste. Set aside.

Cooking the Fillings

    Cook the Hash Browns

    In a skillet over medium heat, cook the hash browns according to package instructions until crispy and golden brown. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add a little oil if needed, and sauté the sliced mushrooms and finely chopped jalapeño until the mushrooms are tender, about 4-5 minutes.

    Scramble the Eggs

    In a bowl, whisk the eggs until combined. Pour into the skillet with the sautéed vegetables. Cook over medium heat, stirring gently until the eggs are fully cooked, about 3-4 minutes.

    Add Cheese

    Just before the eggs are done, sprinkle the shredded cheddar cheese over the egg mixture. Stir until the cheese is melted and well combined.

Assembling the Burritos

    Fill the Tortillas

    Lay a tortilla flat on a clean surface. Spoon a portion of the egg and vegetable mixture onto the center of the tortilla, followed by some crispy hash browns and a few slices of avocado.

    Wrap the Burrito

    Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and fillings.

Serving the Burritos

    Serve with Sauce

    Cut the burritos in half and serve warm with the tomatillo sauce drizzled over or on the side for dipping.
