Balsamic Chicken Party Tray Recipe

Preparing the Chicken

    Marinate the Chicken

    In a large bowl, combine olive oil, garlic powder, salt, and black pepper. Add the chicken breasts and coat well. Cover and marinate in the refrigerator for at least 30 minutes.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove chicken from the marinade and place on the grill. Cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes.

    Slice the Chicken

    After resting, slice the grilled chicken into thin strips and set aside.

Assembling the Salad

    Prepare the Mixed Greens

    In a large serving tray or bowl, place the mixed greens as the base layer.

    Add the Chicken

    Arrange the sliced chicken evenly over the mixed greens.

    Top with Cheese and Nuts

    Sprinkle the gorgonzola cheese crumbles and glazed cranberry walnuts on top of the chicken.

Making the Dressing

    Combine Dressing Ingredients

    In a mixing bowl, whisk together balsamic vinegar, honey, and Dijon mustard. Gradually add olive oil while whisking to emulsify. Season with salt and black pepper to taste.

    Serve

    Drizzle the balsamic dressing over the assembled salad just before serving. Toss gently to combine if desired.
