Method

Preparing the Beef

  1. 1

    Season the Roast

Preheat your oven to 275°F (135°C). In a small bowl, mix salt, black pepper, garlic powder, and onion powder. Rub this seasoning mix all over the American Wagyu roast.

  2. 2

    Roast the Beef

Place the seasoned roast in a roasting pan and insert a meat thermometer into the thickest part. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours. Once done, remove from the oven and let it rest for at least 15 minutes.

Preparing the Toppings

  1. 3

    Prepare Vegetables

While the beef is roasting, wash and dry the lettuce. Slice the tomato and red onion thinly. Set them aside for assembling the sandwich.

  2. 4

    Prepare Cheese

Slice the provolone cheese if not pre-sliced, and set aside.

Assembling the Sandwich

  1. 5

    Slice the Beef

Once the roast has rested, thinly slice the beef against the grain.

  2. 6

    Build the Sandwich

Take a sub roll and spread about 2 tablespoons of mayonnaise on the inside. Pile on the sliced Wagyu beef, then add slices of provolone cheese, followed by lettuce, tomato, and red onion slices. Close the sandwich and repeat for the remaining rolls.
