Method

Preparation

  1. 1

    Season the Steak

Remove the Wagyu steak from the refrigerator and let it come to room temperature for about 30 minutes. Pat it dry with paper towels. Season both sides generously with salt and freshly ground black pepper.

  2. 2

    Heat the Pan

In a heavy skillet or cast-iron pan, heat the olive oil over medium-high heat until it shimmers but is not smoking.

Cooking

  1. 3

    Sear the Steak

Carefully place the seasoned Wagyu steak in the hot skillet. Sear for about 2-3 minutes without moving it, until a golden brown crust forms on one side.

  2. 4

    Flip the Steak

Using tongs, flip the steak over and cook for an additional 2-3 minutes for medium-rare, or until the desired doneness is reached. For added flavor, you can add a sprig of fresh herbs and butter to the pan and baste the steak with the melted butter.

Resting

  1. 5

    Let it Rest

Once cooked to your liking, remove the steak from the skillet and let it rest on a cutting board for about 5 minutes before slicing. This allows the juices to redistribute.
