    Prepare the Carrot Broth

    Add sliced carrots and vegetable broth. Bring to a boil, then reduce heat and let simmer for 20 minutes until carrots are tender.

    Blend the Broth

    Use an immersion blender to puree the broth until smooth. Season with salt and pepper to taste. Keep warm.

    Cook the Gnocchi

    In a separate pot, bring salted water to a boil. Add gnocchi and cook according to package instructions until they float. Drain and set aside.

    Grill the Salmon

    Preheat the wood-fire grill. Brush salmon fillets with remaining olive oil, and season with salt, pepper, and lemon juice. Grill salmon for about 6-8 minutes per side or until cooked through.

    Combine Ingredients

    In a large bowl, toss the cooked gnocchi with baby kale until the kale is slightly wilted. Serve the gnocchi mixture topped with grilled salmon and carrot broth poured around the plate.
