    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin shoestrings using a mandoline or a sharp knife. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Make Garlic Oil

    In a small saucepan, heat the olive oil over medium heat. Add the garlic cloves and cook until fragrant, about 2 minutes. Remove from heat and let it cool. Strain out the garlic and set the oil aside.

    Fry the Potatoes

    Heat a large pot of oil to 350°F (175°C). Drain the soaked potatoes and dry them thoroughly with paper towels. Fry the potato strips in batches, cooking until golden brown and crispy, about 3-4 minutes. Drain on paper towels and season with salt and black pepper.

    Prepare the Aioli

    In a mixing bowl, combine mayonnaise, lemon juice, chopped fresh rosemary, and salt and pepper to taste. Mix well until smooth.

    Serve

    Plate the crispy shoestring potatoes, drizzle with garlic oil, sprinkle with grated Parmesan cheese, and serve with the rosemary aioli on the side.
