Make the Ravioli Dough
In a large bowl, combine flour and salt. Create a well in the center and add the egg and water. Mix until a dough forms, then knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a separate bowl, mix the shredded brisket, ricotta cheese, and half of the grated Parmesan cheese. Season with pepper to taste.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece on a floured surface to about 1/16 inch thick.

Fill the Ravioli
Place teaspoons of the filling on the rolled dough, spacing them about 2 inches apart. Fold the dough over to cover the filling, and press down to seal. Cut out individual ravioli using a pasta cutter or knife.

Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

Toast the Ravioli
In a large skillet, heat some oil over medium heat. Add the boiled ravioli and toast for about 2-3 minutes on each side until golden and crispy.

Sprinkle the remaining Parmesan cheese over the toasted ravioli and serve warm.
