Roasted Aged Prime Rib

    Prepare the Prime Rib

    Take the prime rib roast out of the refrigerator and let it sit at room temperature for about 1 hour before cooking. Preheat your oven to 450°F (232°C).

    Season the Meat

    In a small bowl, mix together the kosher salt, black pepper, garlic powder, and fresh rosemary. Rub the mixture all over the prime rib roast. Drizzle with olive oil and massage it into the meat.

    Roast the Prime Rib

    Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes to develop a crust.

    Lower the Temperature

    After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour and 15 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Add Butter and Broth

    During the last 30 minutes of roasting, add butter and beef broth to the bottom of the roasting pan to keep the meat moist.

    Rest the Meat

    Once the prime rib is done, remove it from the oven and loosely cover it with aluminum foil. Let it rest for at least 20 minutes before slicing.

    Serve

    Slice the prime rib and serve with the pan juices drizzled on top.
