Caramelize the Onions
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes.

Assemble the Melts
Layer the thinly sliced prime rib on the bottom half of each hoagie roll. Top with a generous amount of caramelized onions and then sprinkle the shredded Gruyère cheese on top.

Bake the Melts
Place the assembled hoagies on a baking sheet and bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly, and the bread is slightly crispy.

Remove from the oven, season with black pepper to taste, and serve hot.
