Prepare the Mignonette
In a small bowl, combine the finely chopped shallots, red wine vinegar, and freshly ground black pepper. Stir well and set aside to allow the flavors to meld.

Shuck the Oysters
Carefully shuck the fresh oysters using an oyster knife. Hold the oyster with a towel, insert the knife into the hinge, and twist to open. Remove the top shell and discard.

Plate the Oysters
Arrange the shucked oysters on a serving platter filled with crushed ice to keep them chilled.

Serve with Accompaniments
Serve the oysters with the prepared mignonette, Tabasco sauce, and cocktail sauce on the side. Enjoy!
