Lobster Bisque Ingredients

Method

Lobster Bisque Directions

  1. 1

    Cook the Lobster

Start by boiling the lobster tails in salted water for about 8-10 minutes until they turn bright red. Remove from water and let cool. Once cooled, extract the meat and chop it into bite-sized pieces, and set aside.

  2. 2

    Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add chopped shallots, carrots, and celery, sautéing until softened, about 5-7 minutes. Stir in minced garlic and cook for an additional 1-2 minutes.

  3. 3

    Add Tomato Paste and Wine

Stir in the tomato paste and cook for 1 minute. Then pour in the dry white wine, scraping the bottom of the pot to deglaze, and let it simmer for about 5 minutes.

  4. 4

    Add Stock and Seasonings

Add the lobster stock, heavy cream, thyme, bay leaf, salt, and black pepper. Bring the mixture to a gentle boil, then reduce heat and simmer for about 20 minutes.

  5. 5

    Blend the Soup

Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer it to a blender in batches.

  6. 6

    Finish with Lobster Meat

Stir in the reserved lobster meat and let it heat through for about 5 minutes. Adjust seasoning with more salt and pepper if needed.

  7. 7

    Serve

Ladle the bisque into bowls and serve hot. Enjoy your delicious lobster bisque!
