Cook the Lobster
Start by boiling the lobster tails in salted water for about 8-10 minutes until they turn bright red. Remove from water and let cool. Once cooled, extract the meat and chop it into bite-sized pieces, and set aside.

Add Tomato Paste and Wine
Stir in the tomato paste and cook for 1 minute. Then pour in the dry white wine, scraping the bottom of the pot to deglaze, and let it simmer for about 5 minutes.

Add Stock and Seasonings
Add the lobster stock, heavy cream, thyme, bay leaf, salt, and black pepper. Bring the mixture to a gentle boil, then reduce heat and simmer for about 20 minutes.

Blend the Soup
Remove the bay leaf and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer it to a blender in batches.

Finish with Lobster Meat
Stir in the reserved lobster meat and let it heat through for about 5 minutes. Adjust seasoning with more salt and pepper if needed.
