    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Scrub the jumbo potatoes under running water and pat them dry with a towel. Prick each potato several times with a fork to allow steam to escape while baking.

    Bake the Potatoes

    Rub the potatoes with a little butter, salt, and black pepper. Place them directly on the oven rack and bake for 45-60 minutes, or until they are tender and a fork can easily pierce through.

    Prepare the Toppings

    While the potatoes are baking, prepare the toppings. In a bowl, mix the sour cream, shredded cheddar cheese, and chopped chives together. Set aside.

    Load the Potatoes

    Once the potatoes are done, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato and gently squeeze the ends to open them up. Add a generous amount of the sour cream mixture into each potato.

    Add Lobster (if desired)

    If you are adding poached lobster, add the lobster meat on top of the loaded potatoes.

    Serve

    Serve the loaded baked potatoes hot, garnished with additional chives and a pat of butter if desired.
