Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

Heat the Oil
In a large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accurate temperature.

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches, making sure not to overcrowd the pot. Fry them for about 5-7 minutes or until golden brown.

Drain and Season
Remove the fries from the oil and drain on paper towels. Immediately sprinkle with salt, pepper, and garlic powder to taste.
