    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes. This ensures even cooking.

    Season the Steak

    Rub the steak with olive oil, and generously season both sides with salt and black pepper.

    Preheat the Pan

    Heat a heavy skillet (preferably cast iron) over medium-high heat until very hot.

    Sear the Steak

    Place the steak in the hot skillet and sear for about 3-4 minutes on one side, without moving it, until a nice crust forms.

    Flip and Add Flavor

    Flip the steak and add butter and fresh rosemary (or thyme) to the pan. Cook for an additional 3-4 minutes, basting with melted butter.

    Use a meat thermometer to check for doneness (130°F for medium-rare, 140°F for medium).
