Prepare the Brisket
Preheat your oven to 300°F (150°C). Season the brisket with salt and black pepper on all sides.

Braised the Brisket
Return the brisket to the pot, add cider and fresh rosemary. Cover and braise in the oven for 3 hours or until the brisket is tender.

Grill the Apples
While the brisket is braising, slice the apples and grill them until caramelized, about 2-3 minutes per side. Set aside.

Cook Pappardelle
Bring a large pot of salted water to a boil. Cook the pappardelle according to package instructions until al dente. Drain and set aside.

Make the Cream Sauce
Once the brisket is done, remove it from the pot and let it rest. Strain the braising liquid, then return it to the pot. Stir in the heavy cream and bring to a simmer until slightly thickened.

Combine and Serve
Slice the brisket and serve over pappardelle. Drizzle with the rosemary cider cream sauce and top with grilled apples. Enjoy!
