    Prepare the Lobster

    In a pot, bring water to a boil. Add the lobster tails and cook for about 5-7 minutes until they are bright red and cooked through. Remove from water and let cool. Once cool, remove the meat from the shells and chop into bite-sized pieces.

    Butter Poach the Lobster

    In a skillet, melt the butter over medium heat. Add the chopped lobster meat and cook gently for about 2-3 minutes until heated through. Stir in the chopped Calabrian peppers and season with salt and black pepper. Remove from heat and set aside.

    Prepare the Stuffing

    In a bowl, mix together the mascarpone cheese, butter poached lobster mixture, and breadcrumbs. Adjust seasoning with salt and pepper to taste.

    Stuff the Bone Marrow

    Preheat your oven to 400°F (200°C). Place the bone marrow pieces on a baking sheet lined with parchment paper. Generously fill each bone with the mascarpone and lobster stuffing.

    Bake

    Bake in the preheated oven for about 15-20 minutes, or until the top is golden brown and the marrow is sizzling.

    Serve

    Remove from the oven and let cool for a minute. Garnish with fresh chopped parsley and serve immediately.
