    Prepare the Blackened Mahi

    Rub the Mahi Mahi fillets with blackening spice on both sides. Heat a skillet over medium-high heat and add a bit of oil. Once hot, add the fillets and cook for about 3-4 minutes per side or until fully cooked and blackened.

    Make the Cilantro Jalapeño Lime Aioli

    In a small bowl, combine the mayonnaise, minced jalapeño, lime juice, and chopped cilantro. Mix well and set aside.

    Prepare the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt and pepper to taste.

    Assemble the Sandwich

    Spread a layer of smashed avocado on the bottom half of each bun. Place the blackened Mahi fillet on top, followed by a slice of tomato. Drizzle the cilantro jalapeño lime aioli over the tomato and top with the other half of the bun.
