Prepare the Lobster
Begin by thawing the lobster tails if they are frozen. Carefully cut down the back of the shells and gently pull the meat out, leaving it attached at the base. This will allow for a beautiful presentation.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. In another bowl, beat the eggs and mix in the cold water. Gradually combine the wet and dry ingredients until smooth.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Dip and Fry
Dip each lobster tail in the batter, allowing any excess to drip off. Carefully place the battered lobster tails in the hot oil and fry until golden brown, about 4-6 minutes. Ensure they are cooked through and have an internal temperature of 145°F (63°C).

Drain and Serve
Remove the lobster tails from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately with your favorite dipping sauce.
