Bacon-wrapped Medallions Recipe

Preparation

    Prepare the Yukon Mash

    Peel and chop the Yukon Gold potatoes. Boil in salted water until tender, about 15 minutes. Drain and mash with butter, heavy cream, salt, and pepper until creamy. Set aside.

    Cook the Green Beans

    Blanch the green beans in boiling water for 3-4 minutes until bright green. Drain and set aside.

    Prepare Cowboy Butter

    In a bowl, mix together softened butter, minced garlic, chopped parsley, lemon juice, and paprika. Set aside.

Cooking

    Wrap and Cook the Medallions

    Season the beef medallions with salt and pepper. Wrap each medallion with two strips of bacon and secure with toothpicks. In a skillet over medium-high heat, cook the medallions for about 3-4 minutes per side, until the bacon is crispy and the beef is medium-rare.

    Sauté the Mushrooms

    In the same skillet, add olive oil and sauté the oyster mushrooms until golden brown, about 5 minutes.

Assembly

    Plate the Dish

    On each plate, serve a portion of Yukon mash, place the bacon-wrapped medallion on top, arrange the sautéed oyster mushrooms and green beans around, and finish with a dollop of Cowboy butter.
