    Wash and chop the fresh tomatoes, red bell peppers, onion, and garlic cloves. Remove the seeds from the bell peppers and dice them into small pieces.

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the garlic and cook for an additional minute until fragrant.
