Method

Prepare Potato Cake Base

  1. 1

    Boil Potatoes

Peel and chop the Russet potatoes into quarters. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

  2. 2

    Mash Potatoes

Drain the potatoes and return them to the pot. Add 4 tablespoons of butter, 1 cup of milk, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Mash until smooth and creamy.

  3. 3

    Combine Ingredients

Allow the mashed potatoes to cool slightly, then beat in 2 eggs and 1 cup of all-purpose flour until fully incorporated.

Prepare Apple Filling

  1. 4

    Cook Apples

Peel, core, and slice the Granny Smith apples. In a skillet, melt 2 tablespoons of butter over medium heat. Add the apples, 0.5 cup of brown sugar, 1 teaspoon of cinnamon, and 1 tablespoon of lemon juice. Cook until the apples are soft, about 5-7 minutes.

Assemble and Bake

  1. 5

    Layer Ingredients

Preheat the oven to 350°F (175°C). In a greased baking dish, spread half of the potato mixture evenly. Top with the apple filling, then layer the remaining potato mixture on top.

  2. 6

    Bake Cake

Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden and a toothpick comes out clean.

Prepare Topping

  1. 7

    Mix Topping

In a small bowl, combine 1 cup of sour cream with 0.25 cup of chopped chives. Mix well.

Serve

  1. 8

    Plate and Enjoy

Once baked, let the potato cake cool for a few minutes before slicing. Serve warm with a dollop of the sour cream and chive topping.
