Prepare Sushi Rice

    Rinse and Cook Rice

    Rinse 1 cup of sushi rice under cold water until water runs clear. Cook the rice according to package instructions, usually in a rice cooker or on the stovetop with 1.2 cups of water.

    Season Rice

    Once cooked, let the rice cool slightly. In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt. Stir until sugar is dissolved, then fold this mixture into the rice. Set aside to cool completely.

Prepare Poke Mixture

    Dice Salmon

    Cut the fresh salmon fillet into small cubes (about 1/2 inch each).

    Mix Ingredients

    In a bowl, combine the diced salmon, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, 2 tablespoons of chopped green onions, 1 diced avocado, 1 diced cucumber, and 1 teaspoon of Sriracha sauce. Mix gently to avoid breaking the avocado.

    Sprinkle 1 teaspoon of sesame seeds over the poke mixture.

Assemble the Poke Stack

    Layer Ingredients

    In a serving dish or bowl, start by placing a layer of the seasoned sushi rice at the bottom. Then, carefully layer the poke mixture on top of the rice.

    Add strips of nori on the side and a tablespoon of pickled ginger on top or alongside the poke stack for garnish.
