Prepare Sushi Rice

Rinse and Cook Rice
Rinse 1 cup of sushi rice under cold water until water runs clear. Cook the rice according to package instructions, usually in a rice cooker or on the stovetop with 1.2 cups of water.

Once cooked, let the rice cool slightly. In a small bowl, mix 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt. Stir until sugar is dissolved, then fold this mixture into the rice. Set aside to cool completely.

Cut the fresh salmon fillet into small cubes (about 1/2 inch each).

In a bowl, combine the diced salmon, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, 2 tablespoons of chopped green onions, 1 diced avocado, 1 diced cucumber, and 1 teaspoon of Sriracha sauce. Mix gently to avoid breaking the avocado.
