Method

Prepare the Red Wine Reduction Sauce

    Start the Reduction

    In a medium saucepan, combine the red wine and finely chopped shallots. Bring to a boil over medium-high heat.

    Simmer the Sauce

    Once boiling, reduce the heat to medium-low and let the mixture simmer until it is reduced to about half its original volume, approximately 15-20 minutes.

    Add Flavor

    Stir in the fresh thyme, butter, salt, and black pepper. Continue to simmer for another 5 minutes to meld the flavors.

    Strain the Sauce

    Remove from heat and strain the sauce through a fine mesh sieve to remove the shallots and thyme leaves. Set aside.

Prepare the Pedestal Base

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare Puff Pastry

    Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into a circle, approximately 6 inches in diameter.

    Stack the circles on top of each other to create a thick base. Brush the top layer with the beaten egg and sprinkle with grated Parmesan cheese.

    Place the pedestal base on a baking sheet and bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.

Assemble and Garnish

    Once the pedestal base is baked and cooled slightly, carefully place it on a serving plate.
