Preparing the Roast Beef

In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, rosemary, and thyme. Rub this mixture all over the beef roast.

Place the seasoned beef on a roasting pan and insert a meat thermometer into the thickest part of the meat. Roast in the preheated oven for about 25-30 minutes per pound, or until the internal temperature reaches 135°F (57°C) for medium-rare.
