Method

Preparing the Beef

    Season the Steak

    Rub the Piedmontese beef steak with olive oil, then season both sides generously with salt and black pepper.

    Cook the Steak

    Heat a grill or skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side until it reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 130°F (54°C).

    Cool and Slice

    Remove the steak from the heat and let it cool at room temperature for about 10 minutes. Then wrap it in plastic wrap and refrigerate for at least 1 hour until chilled. Once chilled, slice thinly against the grain.

Assembling the Sandwich

    Prepare the Focaccia

    Take 4 slices of rosemary focaccia and lay them out on a clean surface.

    Layer the Ingredients

    Spread 1 tablespoon of creamy horseradish on each slice of focaccia. Layer with arugula, slices of tomato, pickled red onion, and thin slices of the cold roast beef.

    Add Cheese

    Top each sandwich with a slice of Tillamook white cheddar cheese.

  4. 7

    Finish with Aïoli

    Spread 1 tablespoon of garlic aïoli on the top slice of focaccia, then close the sandwich.
