Method

Cooking Pasta

    Boil Pasta

    In a large pot, bring water to a boil. Add 1 tablespoon of salt. Add the pasta and cook according to the package instructions until al dente.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving some pasta water.

Cooking Vegetables

    Prepare Vegetables

    Wash and chop the bell pepper, zucchini, carrot, and broccoli into bite-sized pieces. Halve the cherry tomatoes.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add the chopped bell pepper, zucchini, carrot, broccoli, and cherry tomatoes to the skillet. Cook for about 5-7 minutes until the vegetables are tender.

    Add Spinach

    Stir in the spinach and cook for an additional 2-3 minutes until wilted.

Combine and Serve

    Mix Pasta and Sauce

    Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine, adding reserved pasta water if necessary to create a light sauce.

    Season and Garnish

    Season with black pepper and toss in the grated Parmesan cheese and chopped fresh basil. Serve immediately.
