Method

Base Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 3

    Cream Butter and Sugar

In another bowl, cream the unsalted butter until smooth. Gradually add the sugar mixture and beat until light and fluffy.

  4. 4

    Add Eggs and Vanilla

Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  5. 5

    Combine Mixtures

Gradually add the dry mixture to the butter mixture alternately with milk, starting and ending with the dry mixture. Mix until just combined.

Filling Preparation

  1. 6

    Prepare the Filling

In a medium bowl, combine fresh blueberries, raspberries, lemon juice, cornstarch, and powdered sugar. Gently toss until the berries are well coated.

Assembly and Baking

  1. 7

    Layer the Base and Filling

Pour half of the batter into the prepared cake pan. Spread the berry mixture evenly over the batter. Top with the remaining batter.

  2. 8

    Bake the Cake

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  3. 9

    Cool and Serve

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve with whipped cream and garnish with mint leaves if desired.
