Preparation of Mahi-Mahi

    Marinate the Fish

    In a bowl, combine the chili oil, E.H. spice, and cumin. Add the mahi-mahi fillets and coat them thoroughly. Allow to marinate for at least 15 minutes.

    Cook the Mahi-Mahi

    Heat a skillet over medium heat. Once hot, add the marinated mahi-mahi fillets and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. Remove from heat and set aside.

Vegetable Preparation

    Sauté Vegetables

    In a separate pan, heat a tablespoon of chili oil over medium heat. Add minced garlic, diced red onion, shiitake mushrooms, asparagus, and kale. Sauté for about 5-7 minutes until the vegetables are tender.

    Add Tomato and Roasted Peppers

    Once the vegetables are tender, add the diced tomato and roasted red peppers. Stir and cook for an additional 3-4 minutes until heated through.

Assembly

    Combine Ingredients

    In a large bowl, layer the sautéed vegetables, cooked mahi-mahi, and top with shredded Tillamook white cheddar.

    Add Croutons

    Sprinkle croutons on top for added crunch.
