    Prepare the Marinade

    In a bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, and black pepper until well combined.

    Marinate the Pork

    Place the pork tenderloin in a resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or ideally overnight for more flavor.

Mandrin Pancakes

    Mix the Batter

    In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. In another bowl, whisk together the milk and eggs. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the mandarin orange segments and melted butter.

    Cook the Pancakes

    Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown. Repeat with remaining batter.

Grilling the Pork

    Preheat your grill to medium-high heat. Remove the pork from the marinade and discard the marinade.
