Prepare the Pancake Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add the boiling water while stirring with chopsticks or a fork until a dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5 minutes until smooth. Cover the dough with a damp cloth and let it rest for 30 minutes.

Roll and Cook the Pancakes
After resting, divide the dough into three equal pieces. Roll each piece into a circle about 6 inches in diameter. Cook each pancake in a dry skillet over medium-high heat for about 1-2 minutes on each side until lightly browned. Keep warm.

Marinate the Pork
In a bowl, mix the plum sauce, soy sauce, minced garlic, minced ginger, and black pepper. Add the pork tenderloin and coat it evenly with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Namasu
In a bowl, combine the julienned daikon and carrot. In a separate bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour the vinegar mixture over the vegetables and toss to coat. Let sit for at least 15 minutes to marinate.
