    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Remove the beards (the fibrous strands) by pulling them towards the hinge of the mussel.

    Sauté the Aromatics

    In a large pot or Dutch oven, melt the butter over medium heat. Add the minced garlic and diced shallots. Sauté for about 2-3 minutes until the shallots are translucent and the garlic is fragrant.

    Add the Wine

    Pour the white wine into the pot and bring it to a simmer. Let it cook for about 2 minutes, allowing the alcohol to evaporate.

    Cook the Mussels

    Add the cleaned mussels to the pot. Cover with a lid and let them steam for about 5-7 minutes, shaking the pot occasionally, until the mussels open. Discard any that do not open.

    Finish the Dish

    Once the mussels are cooked, stir in the chopped parsley and season with salt and black pepper. Serve immediately with lemon wedges on the side.
